postheadericon Surprise Red Velvet Cupcakes For Valentine's Day and Other Occasions



the wonderful little bits of red velvet sky as a surprise candy kiss in center. Imagine the joy of biting into one of those surprise Red Velvet cupcakes and getting a mouthful of soft candy kiss. These easy to make cupcakes are perfect for many occasions, especially Valentine's Day, bridal shower, wedding cupcakes, the list could go on and on. But, how about just for fun or because they are good? What better reason could there be?

24 Hershey's Kisses or Hugs

paste:
1 1 / 2 sticks butter, softened
1 1 / 2 cups granulated sugar
1 / 4 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1 cup buttermilk
2 tablespoons liquid red food coloring
2 teaspoons white vinegar
2 1 / 2 cups cake flour

frosting:
2 (8 oz each) blocks of cream cheese, softened
1 stick butter, softened
1 1 / 2 cup powdered sugar
1 tsp. vanilla extract

Decorate:
Colored sugar sprinkles to match the occasion.

Preheat oven to 350 degrees. Line 24 muffin tin cups with pretty paper liners. Unwrap candy and place one in the bottom of each lined muffin tin. Set aside.

To make cake:
In a large mixing bowl with mixer on medium speed, beat butter, sugar, cocoa powder, baking powder, salt and vanilla for 2 minutes or until creamy. Beat in eggs, 1 at a time, until blended. In two cup measuring cup mix the buttermilk, food coloring, and vinegar until well blended. With mixer on low speed, beat in flour in thirds, alternating with buttermilk mixture in two additions. Beat just until blended. Place a scant 1 / 4 cup of batter over candy into each muffin cup. Pour gently so that the candy stays in the center. Bake at 350 degrees for 20-25 minutes or until wooden toothpick inserted in center of cake comes out clean. Cool in pan on wire rack for 5 minutes before removing from pan. Then remove cakes from pan and allow to finish cooling on wire rack.

To make the icing:
Beat cream cheese and butter in medium bowl with mixer on medium speed until mixture is smooth and creamy. Reduce speed to low and add powdered sugar and vanilla. Increase speed to high and beat until smooth and fluffy. Frost cupcakes and sprinkle with candy sugar or other decorations to suit the occasion. Refrigerator until serving.
